ORIENTAL SALAD
 Soak the black mushrooms in water to cover for 20 minutes.  Cook the bean sprouts in boiling salted water for 2 minutes.  Drain.  Remove the meat from the chicken drumstick and chop finely.  Chop the ham slices finely.  In a mixing bowl combine the mushrooms, bean sprouts, tomatoes, ham, chicken, nuoc-mam, vegetable oil, sugar and salt and pepper.  Mix well to coat.  Cover and refrigerate for 15-20 minutes.  Make a bed of lettuce on a serving platter.  Arrange the bean sprout mixture in the center. Garnish with the hard-boiled eggs.

 1 tbsp dried black mushrooms
1/2 lb bean sprouts
3 medium tomatoes, diced
2 slices boiled ham
1 cooked chicken drumstick,
skin removed and  discarded
1 head Boston lettuce
3 tbsp nuoc-mam (Vietnamese fish sauce)
3 tbsp vegetable oil
pinch sugar
2 eggs, hard-boiled, cut into quarters
