Soak the black mushrooms in water to cover
for 20 minutes. Cook the bean sprouts in boiling salted water for
2 minutes. Drain. Remove the meat from the chicken drumstick
and chop finely. Chop the ham slices finely. In a mixing bowl
combine the mushrooms, bean sprouts, tomatoes, ham, chicken, nuoc-mam,
vegetable oil, sugar and salt and pepper. Mix well to coat.
Cover and refrigerate for 15-20 minutes. Make a bed of lettuce on
a serving platter. Arrange the bean sprout mixture in the center.
Garnish with the hard-boiled eggs.
